Even though Easter is mostly associated with eggs GoFruit! has managed to track down a fruit recipe; the British ‘hot cross bun.’ These are, as the name implies, buns with a symbolic cross on top, which can be made out of pastry or with icing. Eat on Good Friday and, according to superstition, if you share one with a friend you will have ensured one more year of friendship. Just remember to say the magic words: Half for you and half for me, Between us two shall goodwill be.

Ingredients (12 buns)
Dough:
625 g flour
1 teaspoon salt
2 teaspoon spices (for example a mixture of ground cinnamon, clove and nutmeg)
45 g unsalted butter
85 g sugar
Grated rind of 1 small organic lemon
Grated rind of 1 small organic orange
7 g dried yeast or 15 g fresh yeast
1 egg
275 ml milk
125 g dried fruit (for example raisins, cranberries, glacé cherries and/or apricots)
Pastry:
80 g flour
2 tablespoon sugar
3 tablespoon milk
Syrup for glace
Method
Dough:
Melt the butter in a pan and add milk. When the mixture is about 30 degrees dissolve the yeast in it. Add the rest of the ingredients except flour. Stir well and then gradually add the flour and knead until the dough is smooth. Leave the dough to rise for 1 hour, then form 12 equally sized buns and put them on a baking tray with baking paper. Leave to rise for about 30 minutes.
Pastry:
Start preparing the pastry 5 minutes before the buns have risen. Mix all paste ingredients thoroughly and pour into a plastic bag. Snip off one corner and draw a cross on each bun.
Bake at 180 degrees for 15-20 minutes. Brush with syrup as soon as you have taken the buns out of the oven.
Serve warm with butter.
